TOFU & QUINOA SALAD
What you need, what what you need:
- 1/2 c cooked quinoa
- 1 cup chopped bell peppers (we like to make shit pretty so we use all colors)
- 1 handful spinach
- 1 block of Trader Joe’s Organic Marinated Savory Tofu (cubed)
What to do:
Saute garlic & onion in a tbs. of EVOO, add bell peppers and cook until soft, add spinach until wilted, add tofu until toasty, and mix in ready made quinoa. Make that ish sparkle however you like. D-O-N-E.
