Coconut Oatmeal Protein Cookies

Yesterday I was bound and determined to make delicious, nutritious and perfect oatmeal protein cookies. I accomplished just that. Even my mom loved them.

La Recita!

Dry Ingredients (mix dry in one bowl)

  • 1 cup of gluten free oats (or whatever oats)
  • 4 scoops of vanilla whey protein
  • 1/4 cup of coconut flour (I think almond flour would actually be a good consistency too)
  • 4 tablespoons unsweetened shredded coconut
  • 1/4 cup of Xyla (you could use stevia too)
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt

Wet Ingredients (mash this up in a separate bowl)

  • 1/2 cup of egg whites
  • 1 teaspoon of almond extract
  • 1 teaspoon of vanilla extract
  • 1/2 cup of almond butter (or your favorite nut butter)

Combine the two bowls, mix it up real good, and spoon 12 cookies onto an oiled cookie sheet and bake at 350 for about 10-15 minutes depending on your oven.

  • 157 Calories
  • 11 Grams of Protein
  • 10 Grams of Carbs
  • 8 Grams of Fat
  • 1 Gram of Sugar!!

Serve at your mom’s weekly pickleball game and watch the ladies swoon over these delicious protein rich treats! (Though my mom would like to dip them in chocolate.)
